I just got back from this morning's Meditation Hike and Tai Chi at the top of the mountain followed by a labyrinth walk. It was wonderful and I am going to sign off now to join the discussion group in a few minutes.
Before I go, I thought you might enjoy one of the recipes from last night's cooking class that Chef Dean Rucker was kind enough to give me permission to reprint. It's delicious--cool, fruity, and would be wonderful as a summer cocktail. Enjoy!
Chef Dean Rucker's WATERMELON CRANBERRY LIME SLUSHY
Serving: 6
1 pound watermelon, diced
2 cups cranberry juice
2 tablespoons lime juice, freshly squeezed
2 cups ice cubes
4 lime slices
4 mint sprigs
Garnish each glass with lime slices and mint springs
In a blender, combine the watermelon, cranberry juice, lime juice and blend approximately 20 seconds to incorporate. Strain. Place the ice and juice back in the blender and blend until ice is crushed fine.
Serve immediately garnished with mint sprig, lime slice and a spear of frozen watermelon.
Only 66 calories per serving (excluding unknown items)...
